How can I make sure the updater checks for the latest updates of the virus signatures files?

There are two possible ways to do this:

Specify a comma-separated list of e-mails which will receive the result of the update process whenever a scheduled update is performed. This list is specified in the Notification settings" in the management console.
Go to Start->Control Panel->Administrative Tools->Event Viewer. Select "Application" in the left pane of the Event Viewer. In Event Viewer select "View" and from the drop-down list select "Newest First".
Then select "View" again and from the drop-down list select "Filter". In "Event source" specify F-PROT Antivirus Updater and press "OK"
Then you get the activity of the F-PROT Antivirus for Exchange scheduled (command-line, automatic) updater in the right pane of the Event Viewer.
